Grease a 17 x 27cm slice pan with extra butter. Step 2 of 4 Heat oil in a frying pan over medium heat. Add bacon and cook, stirring, for 5 minutes or until crispy. Step 3 of 4 Layer and brush each filo sheet with butter. Press filo stack into pan, then trim pastry, leaving a 4cm border above pan edges. Step 4 of 4 Lightly whisk egg and milk in a medium jug, then pour over pastry base. Top with onion, bacon and bocconcini, then bake for 30 minutes or until just set in centre.

Made 12 and used 6 just out of the oven and reheated the other 6 the next day. Serve with a salad, baked beans, etc Very versatile. Have made these but cant seem to find the nutritional information does anyone have this please??? Would love to try for a cocktail party. Do they reheat OK, or could I prepare cases to be cooked in the fridge.
The filo pastry dries out easily so I am not sure how they'd hold up unfilled in the fridge, but yes, once cooked they reheat fine, just use a low heat. These are really delicious. But they needed quite a lot longer in the oven for me. I think 23 mins or so. But really good. Can't wait to serve them to my friends this evening. Thank you very much. I have recently retested these in a couple of ovens so I have adjusted the instructions accordingly.

Make sure they're really evenly cooked through, cover the tops if they seem to be browning on top before firming underneath.
Once cooked and cooled, place in a single layer in a sealed container and place in the fridge. They should keep well - you might just find that the pastry is quite so crisp as it is straight out the oven.
